This has quickly become one of my go to recipes when meal prepping because of the versatility of having it at lunch or dinner without the meals becoming too boring. The best part of this recipe is that you can change your seasonings to match what you are feeling, on days when I'm feeling that I need a kick I add a 1/2 teaspoon of cayenne pepper to the seasoned breadcrumb mixture or when I am feeling a little tangier I add a teaspoon of citrus adobo or lemon pepper. It really is create as you choose and that also allows you to customize your sides and pairings. My current favorite serving options are: Lunch - Serve over top of a hearty bagged salad blend (I use one that includes kale, radicchio, brussels sprouts, and red cabbage) with blue cheese, dried cranberries, and a fruit vinaigrette or green goddess dressing. Dinner - Served with steamed asparagus and garlic butter mashed potatoes. I have also served with mashed cauliflower and it was delicious. Enjoy!
