Fall is here and that means it is time to do all the cliche fall things like apple picking! Apple picking is so basic fall but after you leave the orchard with your perfect selfies you are left with a big task...what the heck do you do with all of these gorgeous fresh apples. Well if you are like me that means it is time to hit the kitchen and try out some new apple recipes which is exactly what happened in this case. My first apple recipe is Apple Pie Bites. I am not a big pie person but pies and fall just go together so why not use some apples to create a tasty handheld version of the treat. This recipe is very easy and great for sharing so if you are hosting a fall event or even just making a meal for friends & family these are sure to keep everyone happy. Now I just need to figure out what's next........

This has quickly become one of my go to recipes when meal prepping because of the versatility of having it at lunch or dinner without the meals becoming too boring. The best part of this recipe is that you can change your seasonings to match what you are feeling, on days when I'm feeling that I need a kick I add a 1/2 teaspoon of cayenne pepper to the seasoned breadcrumb mixture or when I am feeling a little tangier I add a teaspoon of citrus adobo or lemon pepper. It really is create as you choose and that also allows you to customize your sides and pairings. My current favorite serving options are: Lunch - Serve over top of a hearty bagged salad blend (I use one that includes kale, radicchio, brussels sprouts, and red cabbage) with blue cheese, dried cranberries, and a fruit vinaigrette or green goddess dressing. Dinner - Served with steamed asparagus and garlic butter mashed potatoes. I have also served with mashed cauliflower and it was delicious. Enjoy!
Brunch is all the rage right now and I know I am always looking for new things to try when hosting friends for brunch events which led me to breakfast cakes! This recipe is a nice alternative if you are looking for something that isn't too sweet but still provides a little sugar to balance out your menu. Here's how to make it! What You Need:

Nothing says breakfast more than the cheesy goodness of hashbrown casserole. I have always loved getting this dish at restaurants and decided to try my hand at making it for a baby shower brunch I was hosting. It is quite possibly one of the easiest recipes I've ever done. Here's how to make it! What You Need:

Brussels sprouts have rapidly become one of my favorite foods, I can eat them in pretty much anything or any preparation. I have recently moved from oven roasting my Brussels to sauteing them with variations of additional ingredients. This experimentation led me to my current favorite version, Spicy Brussels with Bacon. Here's how to make them... What You Need:
To Make:
note: You can adjust the cooking time for the brussels based on personal preference for crispiness. For a vegetarian or non-pork preparation sub in 1 tbsp of minced garlic & 1/2 of a small-medium sweet onion for the bacon, Cook the garlic and bacon for approximately 2 minutes before adding the jalapenos and brussels sprouts. |
